i first used the gnuplot interface but i can not advice you to do that, cause it was not convenient to me, i prefer excel.
Anyway gams can perform chart and graphs. use the gdx command!, especially execute_unload:
1 type in your gams code: execute_unload ‘write a name for the set of results you want to show.gdx’.
2 run the model
3 in your gamsdir/projdir go and open the gdx file created in 1
4 right click on the item (variable or parameter,…) you want to plot
5 click on chart+one dimension+line chart, then you’ll see the evolution of your item

you could also select more than one itme to plot them in the same graph

attached is an example of dynamic program. you can see the use of execute_unload in the last line.
i wrote a gams learning course that describe all these apsects. i can send you it (pdf format) if you read french.
